The higher the SME input the more pronounced was the degradation of starch. In comparison to potato and amylomaize starch the waxy maize starch sample showed the most striking effect on the weight average molecular weight (Table IV). A comparison of molecular weight distribution curves of different starch types showed, furthermore, that extrusion of native starches resulted preferentially in a degradation of the amylopectinfractionof the starches. This was demonstrated for example in Figure 6 for amylomaize starch.
